Ingredients
1/2 cup (125 mL) butter
1 cup (250 mL) white sugar
1 1/2 cup (375 mL) shredded carrots
1 cup (250 mL) white flour
1 cup (250 mL) sliced almonds
salt to taste
1 teaspoon (5 mL) ground cinnamon
1/4 teaspoon (1.25 mL) ground allspice
1 teaspoon (5 mL) baking soda
1/2 cup (125 mL) shredded apples
Directions
Preheat oven to 300°F (150°C) and butter individual baking dishes.
Cream together butter and sugar. Mix in carrots and almonds. Whisk together flour, salt, cinnamon, allspice, and baking soda. Blend dry ingredients into wet ingredients and add apples. Beat until just combined and transfer to baking dishes. Cover baking dishes with foil and place in a roasting pan with as much water as will fit. Cook for 2 ½ to 3 hours.
